Chiba Prefecture is the number one producer of soy sauce and mirin, two of the most popular seasonings in Japanese cuisine, and is also home to a fermentation-related culture and industry, such as sake breweries and dairy farming, which are thriving in various regions. Fermentation refers to the process by which organic substances such as proteins and sugars are transformed by the action of microorganisms, a process that is beneficial to humans.
Blessed with high-quality groundwater, Kozaki Town in Chiba Prefecture has long been a thriving producer of soy sauce, miso, sake, and more. The "Kouzaki Sake Brewery Festival," held every March and centered around the town's two sake breweries, each with a history of over 300 years, is a hugely popular event that attracts as many as 60,000 visitors.
Located in Kozaki Town, "Kouzaki Sake Brewery Festival," Japan's first fermentation-themed roadside station, opened in April 2015 and has been promoting the appeal of fermented foods to many people both inside and outside the prefecture.
